Apple Bourbon Butter
Yes. That’s right, Bourbon!
Every Halloween we make small Hawaiian roll sandwiches with apple butter, ham, and cheese, we stick them in the oven at 350℉ for about 15 minutes. The sandwiches are paired with a Butternut Squash Tomato Soup.
The apple butter takes the rolls to the next level. They fill you with warmth on a cold Halloween evening.
The apple butter stays in house all season and is incorporated in different sandwiches or as a spread on scones, rolls, or toast.
This week we are going to introduce our Halloween favorites. Some quick treats that have been set in stone in Halloween tradition in the Delish In A Pinch house.

Hera’s Pinch
Sourdough bread, a layer of Apple Butter, a layer of Dubliner Irish Cheese, and a layer of Spinach are a fan favorite. An absolutely delish sandwich!
For the cinnamon, I used a small coffee grinder which you can taste and smell the difference. The coffee grinder is dedicated to spice grinding.
We used an instant pot for this with the slow cooker setting.

- Add apples, sugar, dark brown sugar, salt, cinnamon, ground nutmeg, allspice, Bourbon, apple cider vinegar, and water to the instant pot. Using a wooden spoon mix all the ingredients and set for 6 hours of slow cooking.
- After 6 hours of slow cooking use the immersion blender and puree the apple butter.
- Strain apple butter through a food mill, this is optional.
- Pour the apple butter into glass mason jars and refrigerate.
Notes:
If using a traditional slow cooker then set on high for 2 hours and slow cook for 4-5 hours, periodically stir the mixture.
If using stovetop, use a heavy bottomed pan (dutch oven) and simmer apple butter mixture for 2-3 hours uncovered.
