Apple Cider Donuts
Hello Fall… How we have missed you let me count the ways. We started with Pumpkin Bread and don’t worry we will visit you soon pumpkin but I am talking about visiting another favorite baked Apple Cider Donuts.
We had never made apple cider donuts in the Delish In A Pinch kitchen but we decided that we were going to create a recipe that would hit all those notes of apple and a touch of cinnamon yumminess we look forward to every fall.
Again, I was surprised by the results as all three of my critics devoured them, with each creation. We voted and decided the best version was the one below.
These are baked my friends, as you know we have been having a blast making baked donuts! They are extremely popular in the Delish In A Pinch household.
Hera’s Pinch
Remember those cinnamon chips we spoke about last week, that we used in the Pumpkin Bread? Add them to the donuts and you will get a completely different flavor, cinnamon with a light touch of apple.
We are all about the freshly ground spices in the Delish In A Pinch household. It always elevates the dish. In saying that if we are in a PINCH, we use spices that have already been ground (store-bought). Either way, the donuts will be delicious.
Apple Cider Donuts
Ingredients
- 2 cups of fresh apple cider
- 2 cups of flour
- 1 tablespoon of baking powder
- 1/4 teaspoon of salt
- 1 teaspoon freshly ground cinnamon
- 1/8 teaspoon freshly ground cardamom
- 1/4 teaspoon freshly grated nutmeg
- 1/2 cup raw sugar
- 1/2 cup light brown sugar
- 1/2 cup of sour cream
- 2 tablespoons of unsalted butter (melted)
- 1 teaspoon of vanilla
- 1 egg
- Non-stick Spray
- 3 tablespoons of apple cider
- 1 1/2 cup powdered sugar
Instructions
- Preheat the oven to 375℉. Spray donut pan with nonstick spray.
- Pour apple cider into a saucepan on medium-high heat. We are going to reduce the 2 cups of apple cider to 1/2 cup here, making an apple cider concentrate, 5-7 minutes. Watch it closely.
- In a medium mixing bowl add the flour, baking powder, salt, cinnamon, cardamom, and nutmeg. Mix to combine.
- In a large mixing bowl add the raw sugar, brown sugar, sour cream, melted butter, vanilla, and egg, then whisk together. Add the cooled apple cider concentrate and whisk again.
- Fold the dry ingredients into the apple cider mixture, the batter will be thick.
- Put the batter into a large ziplock bag (cut off one corner) or piping bag and pipe the batter into the prepared donut. Filling the donut cavities 3/4 of the way.
- Bake for 10-11 minutes on the center rack.
- Let the donuts cool for 10 minutes in the donut pan once you pull them out.
- Place the donuts on a cooling rack in a baking tray and drizzle apple cider glaze using a spoon.
- Add 3 tablespoons of apple cider and powdered sugar together into a small bowl and mix with a spoon until well combined.
Notes:
We use an avocado oil spray for the non-stick spray.
