What is Juneteenth?

My ten-year-old asked me this question.

It’s a new national holiday that we celebrate the end of slavery in the United States, as this is the day that enslaved blacks were freed after Galveston, Texas had acknowledged the Emancipation Proclamation. 

After some discussion with a ten year old back and forth of understanding, he then asked me.

“How are we going to celebrate?”

“We are making all things red, red red,” I said. 

I got a look of bewilderment. 

Red is the color used to signify this holiday, as red symbolizes generations of suffering, perseverance, and resilience. 

He nodded and said,

“We need to make sure we have red in all our food”

My friends in honor of Juneteenth, Lil Chef and myself bring you “BEET KETCHUP”. It is a liberating color of red and the delish factor is through the roofs! This recipe comes to us from Chef Harvey and wowee we love it!!!


You can use it as a dip, on burgers, with french fries, elevate an omelet, sandwich spread, there are so many options!!

Hera’s Pinch

Although, Chef Harvey’s recipe is pure perfection I roast my beets in advance, as we use them throughout the week with salads or sandwiches.

Wash & peel the beets and wrap them in aluminum foil and pop them onto a baking sheet. Put them into the oven for 45-50 mins at 350℉. Slow roasting the beets equates to a robust flavor.

Ingredients

Instructions

  1. Roughly chop the beets. Put all the ingredients, except the water into a heavy-bottomed pan and boil until the beets are soft. Occasionally stir. Check the softness with a fork after about 35-40 minutes depending on the size of the beets. 
  2. Add water.
  3. Blend with a hand blender or blender. 
  4. If you are looking for a smoother consistency then strain the beet mixture after you blend it.
