Street Tacos

Brace yourselves I am hitting you with four recipes in one today. You will love me for it because you will LOVE THESE STREET TACOS! We make these throughout the year but it is definitely a summertime staple as I see it pop up on my weekly dinner menu quite often in the summer.

Now, I attached a corn tortilla recipe from scratch but no shame in buying store-bought.

These tacos hit spicy notes. The more jalapeños the more spice but keep in mind that the sour cream counteracts the spice.

This is a dish that can be made in a PINCH, it's super yummy and has been a favorite for a few years!!

The pictures above have two different versions of the street tacos. One with cabbage and spinach in place of the jalapeños and apples, as the slaw.

If you use ground beef, one way to cook the meat is to get it to a point where you hit some crispiness in the meat, not all just some bits. It takes the taco to a whole new flavor level.

Ingredients

Apple Slaw
  • 2 Granny Smith Apples
  • 2 jalapeños
  • 1/4 cup Red Wine Vinegar
  • 1/4 cup Rice vinegar
  • A pinch of salt
  • 1/2 teaspoon pepper
Corn Tortillas
  • 2 cups Corn Masa Flour
  • 1 1/2 cup hot water
Taco Seasoning
  • 1 tablespoon Chili Powder 
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Crushed Red Chili Pepper Flakes
  • 1/4 teaspoon Oregano
  • 1/4 teaspoon Chipotle
  • 1/2 teaspoon Paprika
  • 1 1/2 teaspoon Cumin
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
Street Tacos
  • 1 pound Ground Beef ( or Ground Chicken)
  • 1/4 cup water
  • 1/2 cup of sour cream
  • 2 limes quartered 

Instructions

Apple Slaw
  1. Fine julienne the apples into small long strips and place them in a large bowl. Take the seeds out of the jalapeños and julienne them and place them into the large bowl. Add the red wine vinegar, rice vinegar, salt, and pepper, and mix together with a wooden spoon. Cover with plastic wrap and put into the fridge for 1-2 hours.
Corn Tortillas
  1. In a kitchen aid mixer with the dough hook attached, add 2 cups of the masa cornflour with 1 1/2 cup of hot water and mix on low then move it to medium as the dough is beginning to form. When the dough is coming together you know that you are ready to start making some tortillas.
  2. Place a small ball of dough between two pieces of parchment and roll it out or place the small ball of dough into a tortilla press between 2 pieces of parchment and press out the tortilla.
  3. Place the tortilla on a heated pan and cook the tortilla for about 1-2 minutes per side. You should be able to get 3 in a pan
Taco Seasoning
  1. Mix all the dry ingredients listed under taco seasoning together.
Street Tacos
  1. Place the ground beef into a saute pan and cook for 4-5 minutes. Then add taco seasoning with 1/4 cup of water. Mix until the spices are incorporated into the meat. Cook meat until the water is cooked out.
  2. For Assembly, place a tortilla on a plate, evenly spread about 2 teaspoons of sour cream. Then 1-2 tablespoons of meat and then a spoonful of the apple slaw. Finish with 1/4 of a lime squeezed on top.

Notes:

You may replace the apple with cabbage. Also be careful when cutting jalapeños as the spicy residue stays on the skin.
