Banana Chocolate Walnut Bread

Have you ever had bananas staring at you? You know, there will be 2-3 left and they kinda just stare you down. You walk by them and they taunt you. I don’t blame them as they are a bit old and weary and absolutely perfect for banana bread. hah!

It’s happened to me so often that I needed a staple go to banana bread recipe that hits everyones wish list.

My son and hubster love the chocolate. Hubster also loves the banana bit! I love the walnuts! I also love to give my daughter this bread because in my head, its a healthier bread that is completely acceptable to give to my little toddler. I am not sure everyone would agree with me here. I understand completely. Everything in moderation is my theory!

In this household this bread lasts one day. Not even 24 hours!

You guys will love it. We pair it with some cha (chai) or on it’s own. It can be served warm or cold.

Mixing techniques in baking are essential. The more you mix the banana bread batter the more gluten will develop. For this recipe that means that the bread will not be tender instead we will get a dense, rubbery loaf.

Banana Chocolate Walnut Bread

Yield: 1 loaf

Ingredients

  • ½ cup melted butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 bananas (smash these babies up)
  • 1 ½ cup flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup milk chocolate chips
  • ½ cup toasted walnuts

Instructions

  1. Preheat oven to 350℉.
  2. Spray loaf pan with cooking spray then lightly dust with a thin layer of flour.
  3. Toast walnuts on the stovetop for about 2-3 minutes.
  4. In a large bowl cream together butter and sugar.
  5. Add one egg at a time and mix.
  6. Add vanilla, mashed bananas, and mix them well.
  7. In a smaller bowl combine the flour, baking soda, and salt.
  8. Slowly fold in the flour mixture into the banana mixture, until just moistened, no more than ten seconds (for example 1 Mississippi, 2 Mississippi..10 Mississippi).
  9. Add chocolate chips and toasted walnuts, stir to combine.
  10. Pour this ‘delish’ batter into the prepared loaf pan and cook for 55-60 minutes or until the center is cooked and a toothpick makes it out clear.
