Egg Nog Mini Loaf Cake
What is it about Egg Nog? There is some egg… some nog and it tastes like the holiday itself. It’s full-blown nostalgia in a glass. I always forget how delicious it is until I taste it every Christmas season.
At Delish In A Pinch we wanted to infuse that egg nog feeling and flavor into cake form. A cake that would be easy to make, fun to gift, and mini-sized.
The aroma of this batter is intoxicating. Was tempted to take a spoon and just dig in! The two raw eggs made this thought process a bit problematic though! Make sure to smell the batter before baking it.

Don’t have the mini pans? Don’t worry this recipe is perfect for one big loaf or two mini loaves.
Add 1/4 cup of mini cinnamon chips and get another level of flavor.
The glaze is not necessary as they are delicious without it.
Egg Nog Mini Loafs

- Preheat oven to 350℉. Spray two mini loaf pans with a non-stick spray.
- In a stand mixer with the whisk attachment mix on medium-low the sugar, eggs, and vanilla. Then add egg nog and sour cream and continue to mix.
- In a medium-size bowl add the flour, baking powder, and salt, mix with a fork.
- Change to the paddle attachment and add flour mixture to the liquid mixture in the stand mixer.
- Add melted and cooled butter to the mixture and blend until butter is incorporated.
- Pour egg nog batter into prepared two mini loaf pans, filling 3/4 full, and smooth out the top with a spoon. Bake for 40 minutes and cool for 10 minutes.
- Invert into a cooling rack and cool completely then top with egg nog glaze.
- Add the powdered sugar and egg nog in a small bowl and mix with a fork till consistency of glaze becomes a thick liquid.
