Fudge Wars
In a galaxy far far away, they might have no fudge. However, in this one there are so many fudge recipes that have been declared to be the one and only piece of pure magnificence. We hold a glass to each one of those recipes and raise them a concoction of fudge that was made with Lil Chef this week.
In complete Boba Fett spirit, we wanted to pay homage to the recipes of old and hit the fudge with a flavor of new. Of course decadence, candy thermometers, and arm muscle were involved.
We are introducing you to a new fudge recipe that has been stamped with the Delish In A Pinch approval and will be the fudge recipe that we will make each year going forward. It even won out on a taste test against another recipe of fudge!!!!

Sweet overload!! Those are the two words that have been playing on repeat in my head this week.
The last addition of chocolate can be replaced by mint chocolate, hence creating mint fudge.

- Line a square 8x8 pan with a parchment sling.
- In a heavy-bottomed pan (dutch oven) add the sugar, cocoa, and salt. Stir to combine. Add evaporated milk and stir.
- Turn stove to medium-high and stir to combine all ingredients. Put a candy thermometer in the pan and wait till the mixture hits 210℉. DO NOT STIR while you are waiting.
- Pull the pan off the stove and place it onto a heat-proof mat and add vanilla and chocolate bar and do not stir but let it melt into the fudge, about 5 minutes.
- While you are waiting create an ice bath for the fudge. I use a huge mixing bowl 1/4 filled with water and ice and place the dutch oven straight into the pan. Water should not hit the fudge.
- With a wooden spoon stir to combine and continue to stir till the fudge transitions from shiny to dull. This is where extra arm muscle comes in handy. Stir in the ice bath for about 5-7 minutes then stir while placing the pan on the countertop. About 10 more minutes.
- Place fudge in fridge to set for 6-8 hours.
