Mint Chocolate Truffles

Oh yes! You take the first bite and sweet medleys start playing in your head! Fair warning, there also might be some sound effects accompanying these truffles as you bite into them! 

NO baking involved, three ingredients for the base truffle. Yes! My hubster says this recipe is goofball proof! That’s good to know, I told him. We have all had goofball moments! In saying this, it’s a fun recipe to try with the kids, as effort involved is minimal and the outcome is phenomenal. 

These truffles are quick and perfect for a mint chocolatey treat. We used semi-sweet chocolate chips and mint chips. We dusted them with cocoa powder or powdered sugar. Either are delicious!

Leave out the mint and have 16 oz of pure chocolate for chocolate truffles. Stay tuned we will do something fun for Valentines Day with this same base recipe =)

There will be a little bit of stickiness while rolling these in your palm to shape. It’s okay if they are not perfectly round. Truffles should have character!

  1. Place chocolate and mint chips into a glass medium-sized bowl.
  2. Bring heavy cream to a boil in a saucepan and pour over chocolate and mint chips, let this mixture stand for 10 minutes, then stir till smooth.
  3. Let the mixture cool for 20 minutes.
  4. Place mixture into the refrigerator for 3-4 hours or until set.
  5. Line a baking sheet with parchment paper and in two small bowls spoon in the powdered sugar and cocoa powder.
  6. Using a 1 1/4 ice cream scoop, scoop out one truffle at a time and roll between your palms to form a 1-inch truffle. Then place the truffle into the bowl with cocoa powder OR powdered sugar and place them on the baking sheet lined with parchment paper.
  7. Refrigerate these till ready to serve.
  8. ENJOY!
