Spicy Soba Noodle Salad
This soba noodle dish is always a hit in summer. This is super easy and quick. The flavors are fresh and delicious. Also, if you are looking to take something to a BBQ, this is a winner as it goes well with anything you grill! This dish is a veggie lover’s dream as it is packed with flavor!
Soba noodles and I go back. My father would take us all to a Chinese restaurant that was owned by a Japanese family that had secret “off the menu” Japanese menu items. This is where I was introduced to soba noodles. As I am writing this, I think many of the regulars were aware of the “super-secret menu”. Hah!

Soba noodles are made of buckwheat. In fact, that’s what ‘soba’ means in Japanese, Buckwheat is completely gluten-free. Traditionally served hot in the winter months and cold in summer months.

- Bring a large pot filled with water to a boil. Add the noodles and cook according to package directions. Drain and rinse with cold water, then drain again. Noodles need to be cold.
- Place the noodles in a large bowl and add the cabbage and sesame oil and mix evenly.
- Combine olive oil, lemon juice, soy sauce, chili sauce, turmeric, and ginger in a small bowl and mix well.
- Pour dressing over noodle mixture and add the pickled ginger, cilantro, and green onions. Toss again.
- Enjoy!
