Strawberry Glazed Donuts
Donuts… does anyone else think of Homer Simpson chowing down on donuts? Oh gosh, I bet I am the only one. These donuts definitely had me channeling some of Simpson's nostalgia. My brother and I used to watch it together every Sunday, like clockwork. I don’t remember the episodes. I just remember that this would be a time we would both drop everything and just sit together and laugh, oftentimes we would talk over the episode or make a crack about Homer.
I remember when the show first came out and my father told me the show was for adults. That very same night I heard my Dad through the wall watching the show and chuckling to himself. I knew if it made my Dad laugh, it had to be funny!
I hold up a donut and toast to my “Don’t have a cow” tie-dye Bart Simpson t-shirt.
Alas, these donuts are fluffy, delicious, and best of all baked! The strawberry glaze is sweet and tangy. The sprinkles pull it back and remind you this is a sugary donut. Even though, it is a touch on the healthier side. We will keep that part a secret!
Hera’s Pinch
You may use lemons, grapefruit, oranges, blood red oranges, blueberries, peaches, or apples to make the glaze. With the citrus fruit, you can squeeze the juice over a strainer. With other fruits cook them, add lemon juice, and strain. As we did in the strawberry mixture. Refer to the Recipe below.
Strawberry Glazed Baked Donuts
Ingredients
Instructions
- Preheat the oven to 375℉.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a medium bowl, whisk together the egg, sour cream, yogurt, vanilla, and 1/4 cup water. Put the wet mixture into the dry mixture and stir to combine.
- Fill a ziplock bag with batter and cut a 1/2 inch slot in the corner of the bag and pipe batter into the donut slots halfway.
- Bake until a toothpick inserted into a donut comes out clean, 11-12 minutes. Cool in the pan for 5 minutes, then remove to a wire rack to cool completely.
- To decorate the donuts, dip them halfway into the glaze and then allow excess glaze to drip off or spoon the glaze on the donut over a cooling rack and let the excess drip off. Sprinkle top with confetti sprinkles or choice of sprinkles
- Put the 1/2 cup water and strawberries into a saucepan. Cook on medium heat till strawberries start breaking down about 4-5 minutes then add lemon juice, cook down an additional 2-3 minutes. Strain the mixture over a small bowl, leaving all chunky bits in the strainer and liquid parts in a small bowl.
- Add powdered sugar, honey, and strained strawberry mixture and stir. The mixture should be spreadable yet thick.
